Jalapeno Sausage
It probably starts to sound like a cliché...every
weekend each successive batch of sausage proclaimed to
be my best yet. Well then the sausages must be
getting better with every batch I make. This go
around it's 65% beef and 35% pork smoked jalapeno

I finally hit the nail on the head in
terms of jalapeno. All my previous batches of
jalapeno sausage were a little light on the
jalapenos. Fresh jalapenos are a crapshoot when it
comes to heat. So I undershot and ended up with a
heat that was very subtle, and good, but not quite the
burn I wanted. These are perfect. Jalapeno
flavor and some good jalapeno bite explode in your mouth
without forcing you to reach for a pitcher of
beer. Two minutes after you're done the heat is
gone and you're left just wanting more. Just look
at the color, too. It's a shame you can't enjoy
the aroma of pecan smoke I breathed in while taking
these pictures.
